In India, winter is a time to gorge on some hot and steaming dishes. Being home to many cultures and traditions has resulted in the country being a land of numerous food traditions. Plus the climate of India is fit to cultivate various kinds of crops. There are some fruits and vegetables that are available throughout the year while others are available during a particular season.
One flavourful vegetable that comes in the market during winters is the Spring Onion. These hollow, tubular green leaves growing directly from the bulb are cooked or used raw as a part of salads, salsas or Asian recipes. They are also used in soup, noodle and seafood dishes, sandwiches, curries and as part of a stir fry. Here is a look at some fun recipes that can be made with Spring Onions.
1. Heat a pan with oil. Add 1/2 tsp. kalonji and finely chopped white part of the spring onion (1 bunch) and sauté over high heat for 1/2 minute.
2. Reduce the flame and add 1 chopped onion, 1 tsp. ginger-garlic paste, 2 chopped green chillies, 2 chopped tomatoes, a pinch of salt and cook till the tomatoes become mushy.
3. Add 1 tsp. red chilli powder, 2 tsp. coriander powder, 1/2 tsp. turmeric powder and mix well. Add 3-4 tbsp. water and cook for 2 minutes.
4. Now add the chopped green part of the spring onion, salt to taste and mix well. Let it cook for 2-3 min.
5. Add 1/4 cup water, mix well, and close the pan with a lid and cook for 4-5 min.
